Boterkoek

1 pound European butter, room temperature

1 cup sugar

2 cups flour

1 egg

Pinch of salt

Heat oven to 350 degrees.

In the work bowl of a stand mixer, cream the butter with the sugar until light and well combined. Transfer to a clean work surface and with your hands knead in the flour, egg and salt. Work until well combined.

Pat batter into a 9-inch pie pan and bake 40-45 min in 350 degree oven.

Serves nine.
