“Grate” Grilled Cheese Sandwich

Butter

2 slices white bread

½ cup grated sharp cheddar cheese

¼ cup grated white cheddar cheese

Fresh ground pepper, optional

Heat a cast iron pan or skillet over medium-high heat.

Butter both sides of the of slice of bread, and one side of the other slice. Putting just a bit on the side where the cheese will go but make sure to spread butter all the way to the edges on the sides that will touch the hot pan.

Pile the cheese on one slice of bread, top with a grind of fresh pepper then the other slice of bread. Transfer sandwich to hot pan and cover with the lid from a sauce pot (this traps the heat and makes the cheese melt better). Cook 2 to 3 minutes or until bread starts to brown. You may have to adjust the heat.

Flip sandwich to the other side; cover with the pot lid and cook 2 to 3 more minutes until bread is golden brown and cheese is gooey.

Serves one.
