Tomato Cucumber Salad

Jeff Zilch used lime gelatin in a seasoning blend for his cilantro-lime tacos; he tops them with a cucumber-habanero salsa and serves them with a tomato-cucumber salad.

3 medium cucumbers, peeled and cubed
3 tomatoes, cut into wedges
˝ cup mayonnaise
˝ large onion, sliced
3 tablespoons sugar
Salt and pepper
Combine all the ingredients in a large bowl. Cover and shake to combine. Refrigerate 3-plus hours, shaking every hour or so.
Serves six to seven.
