1 medium head cauliflower, broken into florets

cup celery, sliced into -inch pieces

cup water

1 tablespoon red wine vinegar

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 tablespoon extra-virgin olive oil

2 cloves garlic, minced

teaspoon Italian seasoning

1/8 teaspoon red pepper flakes

Salt and freshly ground black pepper

Steam cauliflower florets 6 to 7 minutes or until desired tenderness. Transfer to a large bowl and add the celery; toss to combine.

In small mixing bowl, combine remaining ingredients. Whisk together to mix well. Pour dressing mixture over vegetable mixture and toss gently to thoroughly coat.

Cover and chill 2 or more hours. Serve chilled.

Serves six.

Nutrition values per serving: 50 calories, 2.5 g fat (0 saturated), 6 g carbohydrates, 2 g fiber, 2 g protein, 55 mg sodium.
