Cookies Galore

2 cups brown sugar

2 cups white sugar

2 cups oil

4 eggs, beaten

4 cups flour

teaspoon baking powder

1 teaspoon salt

2 teaspoons baking soda

Optional mix-ins

2 cups flaked sweet coconut

1 cup chopped nuts

1 cups quick oats

12 ounces chocolate chips

Heat oven to 350 degrees. Grease a couple of cookie sheets.

In a large bowl, cream together sugars, oil and eggs until smooth and well mixed. Add the dry ingredients and mix well. Fold in desired optional ingredients.

Drop batter by the teaspoonful onto prepared cookie sheets and bake 5-7 minutes. Let rest in the pan 5 minutes before removing to a rack to finish cooling.

Makes about nine dozen.
