Waterleaf restaurant in Glen Ellyn will host a Ferrari-Carano wine dinner on Thursday, Feb. 21, which will feature select wines from California’s acclaimed Sonoma County winery.
Following a 6:30 p.m. reception, guests will enjoy an exquisite Waterleaf four-course prix fixe dinner at 7 p.m. prepared by Chef Nadia Tilkian and paired with premier selections from the distinguished Ferrari-Carano cellars.
Vineyard proprietors Don and Rhonda Carano with winemakers Aaron Piotter and Sarah Quider create remarkably consistent and elegant wines. Located in the Sonoma County areas of Alexander Valley, Russian River Valley, Dry Creek Valley, Napa/Carneros and Anderson Valley, it is a perfectly balanced combination of climate, soil and plant material which allows the varietals to develop crisply intense flavors.
Using sustainable farming techniques from the vineyard to the bottle, the Ferrari-Carano vineyards use environmentally conscious methods to produce their memorable wines. To conserve water, dry farming is utilized in on the hillside and mountain vineyards which produce grape clusters comprised of tiny berries with intense concentration of fruit flavors. To keep undesirable compounds and chemicals out of the soil, the vineyard paves their roads with a combination of tree sap and crushed rock excavated from their mountain ranches. Honey bees, nesting boxes, hawk perches and bird houses are situated throughout the vineyards naturally repelling unwelcome pests. These practices ensure the quality of the wine while preserving the land for future generations.
