Turkey pan drippings
2 cups turkey stock
2 tablespoons cornstarch
4 tablespoons cold water
2-3 tablespoons unsalted butter
Remove turkey from the roasting pan and place the pan over two burners. Skim off a bit of the fat. Add 2 cups turkey stock and bring to a simmer, scraping the bottom of the pan to incorporate the browned bits.
In a separate bowl, mix cornstarch and cold water until smooth; slowly add to simmering stock/drippings, stirring constantly until you reach the desired thickness. Finish off with the butter and stir gently. Salt and pepper to taste.
