Ravioli Pot Stickers with Warm Tropical Salsa
12 frozen mini cheese ravioli
2 tablespoons olive oil
1 lime, juiced
½ teaspoon wasabi paste
1 mango, peeled, seeded and diced
1 inch slice of pineapple, peeled, cored and diced
½ small red pepper, seeded and finely chopped
¼ red onion finely chopped
2 tablespoons cilantro chopped
Salt to taste
3 tablespoons crushed banana chips
Boil mini raviolis per package instructions. Remove from water and place in bowl.
In another bowl, mix lime juice and wasabi paste. Add remaining ingredients (except for banana chips) to lime mixture and stir to coat all ingredients well.
Heat oil in skillet. Add ravioli bottom-side down and brown 1 minute then add salsa mixture and cook 1 more minute until warm. Salt to taste.
Plate alongside the shrimp and garnish with banana chips.
Serves four.
