What is your favorite ingredient and how do you like to use it? It changes over time, but lately, cilantro. I love the fragrance, and I use it in concert with or in place of other herbs in dishes like my Buffalo Joes, in a breaded fish coating or added to salads. And it works as a great garnish, too.
Describe your style or approach to cooking. Improvisation and innovation. I'm an engineer who has worked in product development for over three decades. I believe dishes I make should excite all the senses, and that eating is an experience that should stimulate the emotions. Mmmm ...
