Mom’s Ricotta Cookies

2 sticks butter, softened

1 cup ricotta cheese

2 teaspoons vanilla

2 cups sugar

2 eggs

4 cups flour

½ teaspoon salt

1 teaspoon baking soda

3 squares (3 ounces) white chocolate bark, melted

Heat oven to 350 degrees.

In the bowl of a stand mixer, beat the butter, ricotta, vanilla, sugar and eggs together until smooth. Add the flour, salt and soda. Beat until incorporated.

Drop by rounded spoonfuls on cookie sheet, lined with parchment paper. Bake 12 minutes or until bottoms turn a bit brown. Cool cookies thoroughly.

Dip each cookie in melted chocolate; decorate with colorful sprinkles if desired. Set aside to allow chocolate to set and cool.

Makes about four dozen.
