Chicken Burgers

8 cloves garlic

6 tablespoons olive oil, divided

12 ounces fresh spinach

1 lemon, zested and juiced

1 pound ground chicken

6 slices provolone cheese

Peel and thinly slice garlic.

Add 3 tablespoons olive oil to a large pan. Add garlic and sauté until tender and still white. Add spinach and sauté until wilted. Turn off heat and add the lemon juice to the pan and stir. Set aside to cool.

When spinach has cooled, add it and lemon zest to ground chicken and mix well but do not over handle. Form into four large or six smaller patties.

Add the remaining oil to the spinach pan and cook burgers over medium-high heat 5-7 minutes per side or until no longer pink in the middle. Top with provolone cheese. Serve on crusty buns or with some buttered pasta.

Serves four to six.
