John and Joe’s Party Chimis

1 pound ground beef/pork/chicken

1 tablespoon seasoning salt

1 tablespoon basil (dried flakes)

¼ cup Worcestershire sauce

1 packet (about 1.25 ounces) taco seasoning mix

3 cloves garlic

¼ cup chopped cilantro, plus more for garnish

4 large (12-inch) flour tortillas, warmed

2 cups shredded taco cheese

1 cup refried beans, fat free

Vegetable or canola oil 

Toppings

Sour cream, fat free

Shredded lettuce

Diced tomatoes

Diced dill pickles

Sliced jalapeños

Taco sauce

Hot sauce (such as Tapatio)

 

Over medium-high heat, add ground meat of choice to a large skillet with the seasoning salt, basil and Worcestershire sauce. Cook, crumbling meat, until no longer pink. Drain off any grease, necessary.Stir in taco seasoning, garlic, frac14;#160;cup cilantro and heat through. To each warm tortilla, add frac14; cup refried beans, frac14; cup shredded cheese and frac14; pound of cooked meat. Roll up like a burrito (ends folded in).Heat 1-inch of oil in a large skillet and fry the filled tortillas, turning, until browned on both sides. Drain on paper towels. Garnish with your favorite topping and serve. Serves four.Cook#146;s note: Cooked, shredded chicken could be substituted for the ground meat.
