6 cups boiling water
3 cinnamon sticks
1½ cups uncooked steel cut oats
½ cup uncooked quinoa
Salt, to taste
10 tablespoons chopped walnuts
2 ounces dried apricots, diced
2 ounces dried peaches, diced
In a large pot over high heat bring water, cinnamon sticks and salt to a boil. Reduce heat to simmer and add oats and quinoa and cook for about 30 minutes or until it becomes thick.
Remove from heat and discard cinnamon sticks. Stir in chopped walnuts and dried fruit.
Cook's note: What you don't eat the first morning, transfer to a glass container with a tightfitting lid. Each morning scoop a ½ cup portion into a bowl and add frozen berries and 2 tablespoons flaxseed meal and milk or your favorite liquid (if desired). Reheat on stove or in microwave.
