Anniversary Gingerbread

½ cup unsweetened applesauce

2 cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon baking soda

¾ cup low-fat buttermilk

1 large whole egg

¾ cup dark molasses

½ cup granulated sugar

2 teaspoons ground ginger

1 teaspoon cinnamon

¼ teaspoon ground cloves

Powdered sugar

Place a wire mesh strainer over a bowl deep enough to keep the strainer from touching the bowl's bottom and add applesauce. Set aside. Place the oven rack in the middle position and begin heating the oven to 350 degrees. Lightly spray the a 8-by-8-by-2-inch pan with vegetable oil. Set aside. Add flour, baking powder and baking soda to a medium bowl and whisk together until thoroughly combined, about 30 seconds. Set aside. To a large mixing bowl add buttermilk, #8531; cup of the drained applesauce, egg, molasses, sugar, ginger, cinnamon and cloves and whisk together until well combined, about 45 seconds. Add the flour mixture and whisk or stir until the dry ingredients are just moistened, about 30 seconds. Pour the batter into the prepared pan and bake 45 minutes, or until a toothpick inserted into the center comes out clean. Set the pan on a wire rack until completely cooled.
