½ cup old-fashioned rolled oats
1 cup skim or soy milk
1 ounce (or cupped handful) roasted, unsalted almonds or other nuts
¼ cup dried unsweetened cranberries or other dried fruit
Stir together all ingredients in a large, microwave-safe glass bowl. Microwave on HIGH for 4 to 5 minutes. Let sit in the microwave so the oats absorb any remaining liquid. Stir in 1 cup fresh blueberries or other fruit and, if desired, ½ teaspoon honey, maple syrup, brown sugar or Splenda.
