Meatloaf Sliders

8 ounces extra-lean (97 percent fat-free) ground beef

¼

cup finely chopped onion

1 large egg

¼

cup plain breadcrumbs

2 tablespoons low-fat milk

¼

cup grated parmesan cheese

2 teaspoons chopped fresh parsley, optional

teaspoons Worcestershire sauce

teaspoons Dijon mustard

¼

teaspoon salt

⅛ teaspoon ground black pepper

2 teaspoons vegetable oil, such as canola

½

cup ketchup

6 whole-wheat slider buns

In a medium bowl, combine all the ingredients except the oil and ketchup. Mix well. Form the mixture into six (3-inch) patties.

Heat the oil in a skillet over medium heat. Cook the patties for about four minutes on each side, or until cooked through to desired level. Top the patties with ketchup. Serve on slider buns.
